This dry red wine was made in our village of Kisishevy, in Georgia, from the endemic vine stock SAPERAVI. In August, we cut off some grapes from the vines in order to limit the harvest to seven tonnes per hectare so as to increase the quality of the remaining grapes and improve the taste of the future wine. At the end of September, we picked the ripe grapes and manually selected them in our vinery. During the whole fermentation process, which takes place in Qvevri in our winery, we regularly mix the grapes with the help of special wooden batons. Qvevri are traditional large Georgian earthenware vessels, the shape of amphora without handles, which have been used for the past 8,000 years. Once the long maceration is completed, we pour the wine into new Qvevri. This 2020 wine aged for ten months in Qvevri bringing complex flavours, a deep aroma of sun-dried forest fruits and a note of dates. A “Teinturier” grape, Saperavi gives our wine its lovely deep colour and big, but well integrated, tannins follow. We only made 4,100 bottles of this wine which goes well with hard cheeses, roasted red meat and poultry.

Red dry wine from the endemic SAPERAVI variety cultivated in the vineyards of the native village of Kisiskhevi. Ruby-coloured wine with an aroma of red berries enriched by a distinctive note of cherry and blackberry in the aftertaste. Well-structured with balanced tannins and acidity and appealing subtle finish. Year 2021 was characterized by a long hot summer. This resulted in limited harvests with a yield of only 4.5 tonnes per hectare. The ripeness of selected fruit gave a beautiful roundness and nobleness to that wine. The cultivation of our grapevines and the whole process of vinification was conducted in-house with attention devoted to maintaining organic conditions. No chemical substances were used. Eventually the wine, as tradition has it, matured in our cellar for 12 months in clay qvewri.

Dry red grape wine from the endemic Saperavi varieties, harvested manually in a small vineyard near the village of Shakriani, at the foot of the Caucasus (Kakheti region, the valley of the Alazani River).
The wine has a nice saturated ruby color. Fruit flavors (blackberry, cherry, cranberry), slightly earthy and herbal. Grape varieties: Alexandrouli, Saperavi, Malbec
